I checked the wine settings and both are set to system default, but the the sound randomly stops working, or just starts garbled. 

I had this issue with Team Fortress 2. I switched the sound settings within the game from surround sound, which is the settings it pulled from my Steam cloud from Windows, to 2 channel stereo and it works fine now.
